Hygiene and food experts have revealed that the traditional way of thawing frozen meat may not be the best for your food.
According to Susanne Ekstedt of the SP Technical Research Institute of Sweden in Gothenburg, leaving the meat to defrost on a plate in the fridge overnight is not the best method of defrosting.
Ekstedt claims that it’s better to defrost your meat by wrapping it in cling film and placing it in a bowl of cold water. The water conducts heat faster than air, meaning it will thaw more quickly.
She also says that this technique will help the meat keep its full flavour.
It is true that meat and other foodstuffs should be stored in the refrigerator if they are thawed, but it is definitely better to thaw food quickly in water if you are going to use it right away.
As for using the microwave to defrost meat, Per Einar Granum, a microbiologist from the Norwegian University of Life Sciences, says that this a big no-no as microwaves are “too brutal” for the meat and will end up damaging it.
